Pioneer Cooking Weekend

The course starts with an introduction to the methods of cooking across the frontier and the traditional ingredients of the 18th and 19th century Americas.

The first task of the day will be to start the process of traditional skinning and butchery of a whole deer. This will serve as the basis of the evening meal as well as providing a glut of meat that will require preserving. This will be done utilising a range of traditional methods that will allow us extend this resource for future use. 

You will have the opportunity to go away with preserved foods where ever possible. 

Once we have completed the butchery and processed all the meat set aside for preserving there will be an opportunity to start the foraging for some of the wild ingredients needed for the meals to come.

On returning it will be time to start on the evening meal that will take its inspiration from the Southern states of America and Mexico.

Final job of the day while dinner is cooking is to make the mornings ‘French’ bread to allow it to rise over night.

We will start the day by firing up the cob oven in order to bake our bread for breakfast. While we are waiting for this to get up to speed we get the coffee and tea on the boil. As soon as we are happy with the temperature of the oven we will get the loaf in and ready the skillets for the venison steaks.  

After our hearty breakfast it will be all hands to the pump to process our foraged good from yesterday for the lunch time and evening meals. There will also be more game preparation and baking throughout the day.

We will spend the afternoon creating our own ‘tin wear’ cook set which will be incorporated into the evening meal and tomorrows breakfast to make sure that it can stand the demands of the trail.

For this evenings meal we shall look processing a whole turkey and having ourselves an early thanksgiving meal in a traditional setting with many of the original foods supplied to the early settlers of New England by the first nations people.  

For breakfast we will take inspiration from the native tribes of Maine and utilise a ground oven to cook up a bean pot. Whilst this is cooking away we will make up some quick camp breads, utilising some of the camp tin wear made the previous afternoon.

The second half of the morning will be spent in creating the pemmican and finishing off the jerky, fish and hard tack so that you can take this along with their tin wear and wild sourced food home ready for the next trip.

    Toilet facilities are available my means of composting toilets and a portaloo. There are central covered teaching area's within the woodlands comprising of timber and canvas structures.

    This wonderful wonderful woodlands is situated within 45 minutes of West London and the local train station (Oxford) is less than a 15 minute cab ride away. Please ensure when travelling to the venue you use the directions and not rely on Sat Nav in order to prevent getting lost.
